Cake or biscuits? Ah, decisions, decisions. Well, how about something “in-between”? You know, it’s not as dinky as a biscuit, so you won’t have to go back again and again, but not as big as a cake, so you won’t feel guilty for having seconds. Clever, right? Of course I wanted something suitably seasonal and a dark bake with treacle seemed just right. To add just a little bit of “healthiness”, I decided to make it gluten free and add goji berries which are packed with antioxidants which support the immune system – something we can all benefit from during the cold and dark months. These little squares are quite filling but not overwhelming, so they’re perfect for a cosy afternoon with a hot mug of tea.
Here's what you'll need...
- 100g shelled pistachios
- 100g dried goji berries
- 175g butter
- 100g light muscovado sugar
- 150g gluten free self-raising flour
- 100g gluten-free oats
- 2tsp chopped ginger
- 3tbsp black treacle
Here's how it's done...

Preheat the oven to 180C. Put the pistachios into a plastic bag and bash them into pieces with a rolling pin.

In a large pot, melt the butter, sugar and treacle until melted.

Take the pot off the heat. Add the goji berries, pistachios, chopped ginger, flour and oats to the pot and stir well until all combined.

Spoon the mixture into the squares of the baking tray. Bake for 25 minutes.

Once done, take the tray out of the oven and leave to cool before serving.
