"Doughnuts are right up on the list of things that are so good and yet we’re being told that they’re not actually that good (ok, quite bad actually) for our health. Isn’t that so often the case with things we like and that are fun? Admittedly, no matter how you make them, I wouldn’t advocate eating a whole batch in one go, but surely the odd one here and there won’t be too bad, right? And if you’re still worried, then there’s a slightly healthier option: baking them instead of deep-frying them. Now, they do of course still contain a lot of sugar and, yes, some colourings, but they’re such a fun and summery treat that I’m sure we can make an exception. These will be a hit for any children’s party or even with adults. The lemon glaze gives them a fresh taste which is perfect for this time of the year."
Preheat your oven to 180C. Use a little of the melted butter to grease the doughnut mould.
Whisk the butter, eggs and milk together. Add the sugar and whisk until combined.
Add the baking powder to the flour and sift into the wet ingredients. Whisk all together until smooth.
Put about one tablespoon of batter into each mould filling it to about 2/3. Bake each batch for 10 minutes. Leave the doughnuts to cool down.
To make the glaze, add the lemon juice to the icing sugar bit-by-bit until the consistency is “thick-dripping”.
Divide the glaze into small bowls, one for each colour. Add some food colouring gel.
Mix the gel into the glaze, add more if you’re looking for a deeper colour
Now dip the doughnut into the glaze to cover the top.
You now have two options for the decorations:
Using a decorating syringe, piping bag, squeeze bottle, or pre-mixed icing pens (which are super-easy to use), decorate the doughnuts with the pattern that matches each fruit.
Leave the glaze to harden before serving and decorate your tray/plate with some fresh leaves.
