Start by generously greasing a large oven-proof dish with butter and put the milk and cream into a saucepan, add the vanilla extract.
Bring the mix to a simmer and then take off the heat. Put the eggs, sugar and ground cinnamon into a bowl.
Whisk with a hand mixer until light and fluffy, now add the warm milk mix and whisk again.
Place a layer of bread slices into the greased dish and cover with apple slices then place the second layer of bread on top of the apples.
Scatter the remaining apples on top. Now pour the egg/milk mix on top of the bread and apples and bake for 50 minutes.
