Batter:

Sift the flour, baking powder, salt and caster sugar into a large bowl. Whisk them together so everything’s evenly combined.
In a separate jug or bowl, beat the egg with the milk, then whisk in the melted butter. Pour the wet mix into the dry ingredients and stir gently until you have a smooth batter—don’t overmix.
Spoon the batter into five small bowls. Add a drop or two of each food colour (green, yellow, purple, blue, pink) to one bowl each. Stir until you’ve got five vibrant pastel batters.
Warm a non-stick frying pan or griddle over medium heat. Lightly grease with a little melted butter or oil for the first pancake only, then you shouldn’t need more greasing as you go.
Pour about 2 tbsp of one coloured batter into the pan to make a small, 8 cm pancake. Cook for about 1–2 minutes, until bubbles form on the surface, then flip and cook another 1 minute. Transfer to a plate and repeat with each colour, stacking them as you go.
Spray a generous spiral of dairy cream on top of your pancake stack. Pile on fluffy candyfloss “mane” around the cream, then shower everything with rainbow sprinkles.
