Cut one thick, round slice from the middle of the watermelon—this will be your “pizza base”. Aim for about 1–1.5 inches thick so it holds its shape. Lay it flat on a chopping board.
In a small bowl, whip the double cream with 2 tablespoons of honey until it’s thick but still spreadable. You can do this by hand with a whisk or use an electric mixer if you’ve got one handy.
Spread the sweetened cream over the top of the watermelon slice like you’re icing a cake. Make sure it’s evenly covered from edge to edge.
Now for the fun part. Scatter the blueberries and raspberries over the cream. Arrange the sliced strawberries and peaches in little clusters or a pattern if you’re feeling fancy. Sprinkle over the chopped mint for a fresh hit of flavour.
Drizzle a little extra honey over the top to finish it off. Then cut your watermelon “pizza” into wedges using a large knife or pizza cutter. Serve straight away and enjoy while it’s fresh and chilled.
