    Brisket Marinade Recipe

    Smoker-ready marinade for bold, tender brisket—flavour that runs deep.

    Ready to take your smoked brisket to the next level? This bold, flavour-packed marinade is made for low and slow perfection. With a rich blend of savoury, sweet, and smoky notes, it tenderises the meat while layering in deep, mouthwatering flavour. Just marinate overnight, fire up the smoker, and let time and smoke do the rest. It’s effortless prep with seriously satisfying results.

    Here's what you'll need

    • 1 1/2 cups red wine
    • 1/2 cup olive oil
    • 1 1/2 tablespoons mustard
    • 1 1/2 tablespoons lemon juice
    • 1 tablespoon red wine vinegar
    • 1 tablespoon horseradish sauce
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 1/2 teaspoons kosher salt
    • 1 teaspoon cayenne pepper

    Here's how it's done

    Step 1

    Whisk together ingredients and pour over brisket. Let it marinate in fridge overnight in a ziplock bag, moving the brisket occasionally to keep the meat coated.

    Step 2

    Remove brisket from marinade. In a medium saucepan, boil the marinade for 5 minutes to then use the marinade as a mop to brush on / spray on the brisket every 20-30 mins during cooking to keep it moist.

    Step 3

    Set the smoker to 121°C
    Depending on the size, cook the brisket for 3-5 hours, or until the internal temperature reaches 95°C

    Step 4

    Rest the brisket for an hour after cooking wrapped loosely in foil.
