Pizza in England can be expensive. Plus, I don’t always have the time to make fresh dough. These are the factors that led me to creating these pizza rolls. Puff pastry, tomato concentrate and half a pack of pepperoni and we had a tray full of delicious mini pizzas that took about 10 minutes to make.
Swap the pepperoni for parma ham and add feta cheese and you’ve got something that could easily be served up as canapés. Or fry up some mushrooms and onions add create a veggie option that’s just as tasty.
Roll out your puff pastry and preheat your oven to 180C (160C fan). Cover with tomato sauce, then season with pepper and scatter with the basil leaves. Add the pepperoni slices.
Then tightly roll up the entire thing. Slice into 2cm segments with a sharp knife. Don’t worry if they start to look less circular, they’ll expand while you’re cooking them.
Place flat on your baking tray and brush with the beaten egg before baking for 8-10 minutes.
I took them out again and added the cheese before putting them back into the oven for another 2 minutes or at least until the cheese has melted and started to brown.
And that´s it! So easy, so tasty and more than enough for everyone.
Feel free to use any toppings you´d normally have, but you can´t really go wrong with pepperoni and cheese can you? And if you do make your own I would love to know what toppings you´d choose!
