    Roast Chicken and Vegetables

    This whole chicken and veg recipe from @LagomChef is a game-changer for busy weeknights or relaxed Sunday dinners. With minimal prep and maximum flavour, the air fryer delivers golden, succulent results in a fraction of the time. Just season, load, and let the air fryer do the magic.

    Here's what you'll need

    • Whole chicken
    • Potatoes
    • Carrots
    • Swede
    • Parsnips
    • Lemon
    • Thyme
    • Olive oil
    • Salt and pepper

    Here's how it's done

    Step 1

    Cut a lemon in half and put inside chicken cavity, along with fresh thyme sprigs.

    Rub olive oil all over chicken and season with salt and pepper. Place chicken in basket and cook using the roast setting at 170c for 1 hour 10 minutes.



    Step 3

    Cut new potatoes, parsnips, carrots and swede into chunks. Drizzle with olive oil, salt and pepper. Cook at 200c on air fryer setting for 20 mins or until tender and golden brown.



    Step 3

    Serve with blanched spring greens and cauliflower cheese.
