Considering my last recipe took three hours to make I decided to make it up to you with this recipe for dark chocolate dipped coconut macaroons – a dessert snack so cheap and so easy, you could make them every day if you wanted to.

I want to make more. Many more.

These were really easy to do, too easy to be honest and they vanished as soon as they were warm enough to eat. Golden crunchy on the outside, soft and gooey on the inside and dipped in velvety dark chocolate. Oh mama. If you don’t fancy eating them all by yourself (and really, what’s wrong with you if you don’t), then consider serving these up at your next get-together – the bite-sized portions make them perfect party fare.


here's what you'll need...

  • 1 egg white (whisked)
  • 1 1/2 cup desiccated coconut
  • 200ml condensed milk
  • 1/3 cup sugar
  • Half a bar of dark chocolate

here's how it's done...

    Preheat your oven to 180C (160C fan) and get a baking tray lined with baking paper.

    Mix all your dry ingredients together before folding in your egg white. You want a clumpy consistency so go slow with the condensed milk.

    Take a table spoon of your mixture and form a tiny pyramid before placing it on your baking tray and repeat until all your mixture is gone.

    Place in the oven for 10-15 minutes or until the edges are golden brown. While those are in the oven melt your dark chocolate pieces.

    Take your macaroons out of the oven and let them cool. Try and lift them too early and they’’ll fall apart in your hand, you’’re waiting for the sugar to harden so they’’ll keep their shape.

    When they’ve cooled enough, get a separate sheet of baking paper ready, lift each macaroon off the tray and dip the base in the dark chocolate.

    Wait for the chocolate to cool and solidify and serve!
