250g unsalted butter, softened
100g caster sugar
100g light brown sugar
2 large eggs
2 tablespoons Irish cream liqueur
1 teaspoon vanilla extract
400g plain flour
1 teaspoon baking powder
1/2 teaspoon salt
150g white chocolate chips
Instructions:
Preheat the Oven: Set your oven to 180°C (160°C fan) or gas mark 4. Line two baking trays with baking paper.
Cream the Butter and Sugars: In a large bowl, beat the softened butter, caster sugar, and light brown sugar together until the mixture is light and fluffy.
Add Wet Ingredients: Mix in the eggs one at a time, ensuring each is fully mixed in before adding the next. Stir in the Irish cream liqueur and vanilla extract.
Combine Dry Ingredients: In a separate bowl, whisk together the plain flour, baking powder, and salt.
Form the Dough: Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Fold in the white chocolate chips.
Shape the Cookies: Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking trays, spacing them out.
Bake: Place the trays in the preheated oven and bake for 12-15 minutes, or until the edges of the cookies are lightly golden.
Cool: Remove the cookies from the oven and allow them to cool on the trays for 5 minutes before transferring them to a wire rack to cool completely and decorate. Enjoy these delectable cookies with a cup of tea or coffee, or share them with friends and family!
