    Irish Cream Cookies

    Snacks for St Patrick's day don't come much yummier than this, impress your friends and family with these Irish cream cookies!

    Indulge in these delightful Irish Cream Cookies, perfect for St. Patrick's Day celebrations or as a special treat with your favourite hot beverage.

    Ingredients:

    • 250g unsalted butter, softened
    • 100g caster sugar
    • 100g light brown sugar
    • 2 large eggs
    • 2 tablespoons Irish cream liqueur
    • 1 teaspoon vanilla extract
    • 400g plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 150g white chocolate chips

    Instructions:

    1. Preheat the Oven: Set your oven to 180°C (160°C fan) or gas mark 4. Line two baking trays with baking paper.
    2. Cream the Butter and Sugars: In a large bowl, beat the softened butter, caster sugar, and light brown sugar together until the mixture is light and fluffy.
    3. Add Wet Ingredients: Mix in the eggs one at a time, ensuring each is fully mixed in before adding the next. Stir in the Irish cream liqueur and vanilla extract.
    4. Combine Dry Ingredients: In a separate bowl, whisk together the plain flour, baking powder, and salt.
    5. Form the Dough: Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Fold in the white chocolate chips.
    6. Shape the Cookies: Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking trays, spacing them out.
    7. Bake: Place the trays in the preheated oven and bake for 12-15 minutes, or until the edges of the cookies are lightly golden.
    8. Cool: Remove the cookies from the oven and allow them to cool on the trays for 5 minutes before transferring them to a wire rack to cool completely and decorate.
