Nothing quite beats sitting down in the evening with a cup of tea and your favourite biscuit. These Nutella filled beauties will have you reaching for the biscuit tin time and time again. If you love a chocolatey biscuit you will love these oozy, gooey treats!
Heat your oven to 180 °C (160 °C fan/Gas Mark 4). Line two baking trays with baking paper.
In a bowl, beat the softened butter with caster and brown sugars until pale and fluffy—about 2–3 minutes with an electric mixer or a bit longer by hand.
Crack in the egg and pour over the vanilla extract. Beat again until fully incorporated.
Sift together the flour, baking powder and salt, then fold into the butter mixture until you’ve got a soft dough.
Scoop out heaped tablespoons of dough (or use a 3 cm cookie scoop) and roll into balls. Arrange them on the trays, leaving space to spread. Use your thumb or the back of a teaspoon to press a small well into the centre of each. Spoon about 1 tsp of Nutella into each well. Don’t overfill—it’ll melt out if you do.
Pop the trays in the oven for 10–12 minutes. Cookies should be set around the edges but still soft in the middle.
