    Couscous & Tuna Salad

    The perfect quick and easy go-to meal, this couscous and tuna salad is a summer staple!

    We all occasionally need the sort of “one pot meal” that can just be thrown together and ready in less than half an hour. In winter that might some sort of quick soup or pasta dish, but who wants to eat the same thing in summer? Luckily, couscous is the perfect solution for a filling dish that can be enjoyed cold as a salad. The packet kind we find in the shops can be ready in around 10 minutes and all that’s left to do for you is to chop up a few fresh ingredients and you’re pretty much there. It’s a whole meal in one large bowl and of course this salad tastes great too!

    Here's what you'll need

    • 100g couscous
    • 200g tuna (tinned, in brine, drained)
    • 2 vine tomatoes
    • ½ cucumber
    • 85g sliced black olives
    • 1 bunch fresh parsley
    • juice of 1 lemon
    • 5tbsp extra virgin olive oil
    • salt & pepper to season

    Here's how it's done... Step 1

    Put the couscous into a bowl and cover with boiling water (according to package directions or 150ml in this case).

    Step 2

    Chop the cucumber and tomatoes into small chunks.

    Put the cucumber, tomatoes and sliced olives into a large bowl and mix together. Add the tuna and mix.

    Step 3

    Chop the fresh parsley and add to the other ingredients.

    Step 4

    Using a fork, loosen the cooled couscous.

    Add to the other ingredients and stir all until combined.

    Step 5

    Now dress with the lemon juice and olive oil and season to taste with salt and pepper.

    Serve on a nice platter and with a chilled glass of wine.
