    Date & Coconut Oat bars

    A great healthy snack that kids can help make themselves

    "These delicious oat bars are a healthier option than most supermarket cereal bars as they’re made with honey rather than refined sugar, and packed with vitamin-rich fruit and nuts. Kids will also benefit from the slow-release energy of the jumbo oats."

    Here's what you'll need...

    • 200g coconut oil
    • 200g honey
    • 1 tsp vanilla extract
    • 2 bananas, mashed
    • 400g jumbo oats
    • 100g chopped macadamia nuts
    • 50g desiccated coconut
    • 100g chopped dates

    Here's how it's done... Step 1

    Place the coconut oil, honey and vanilla extract into a microwave safe bowl.

    Microwave on high for 90 seconds, stirring every 30 seconds until fully dissolved. Make sure the mixture is warm rather than hot before returning to the children to continue with the recipe.

    Add the mashed bananas and oats and mix well.

     

    Step 2

    Tip in the nuts, coconut and dates then mix well until evenly combined. Spoon the mix into a large tray, lined with greaseproof paper.

     

    Step 3

    Pat the mix down with clean hands so that it’s level all over. Bake for 30-35 minutes until golden brown.

     

    Step 4

    Allow to cool completely, then cut into bars with a sharp knife.

    They’re great little snacks and make a healthy alternative to chocolate for packed lunches.
