    Earl Grey and Lemon Scones

    Be the star of your street party with this brilliantly British bake

    As an Instagram foodie, Emy specialises in making home-cooked meals easy. In preparation for Coronation fever, she’s whipped up a smashing earl grey and lemon scones recipe that’s as British as it gets, featuring a handy baking secret – her trusty food processor. Tea in scones, anyone?  

    Here's what you'll need…

    For the scones:

    • 215g self-raising flour
    • 50g cold salted butter, cubed
    • 1 tsp baking powder
    • 2 Earl Grey tea bags
    • 3 tbsp golden caster sugar
    • 115ml crème fraîche
    • 1 large egg (+ 1 extra for the egg-wash)

    To serve:

    • Clotted cream
    • Lemon curd
    • Lemon peel

    Here's how it's done...

    Step 1

    Pre-heat the oven to gas mark 7 (220c). Add the flour, butter, baking powder to a food processor, along with the tea from inside the bags. Mix on low until well combined (1 min or so). 

    Step 2

    Add the sugar, crème fraîche and egg to the food processor. Mix on low until everything comes together to form a sticky dough, then tip onto a well-floured surface. 

    Step 3

    Roll out the dough to 2-3cm deep and punch out scones with a round cutter. Re-form the dough as you go to use it all up. 

    Step 4

    Place the scones on a lined baking sheet and brush the tops with egg-wash. Pop them into the oven to bake for 12-15mins. 

    Step 5

    Once deliciously golden and cooked through, remove and cool on a wire rack. Serve with clotted cream, lemon curd and a sprinkling of lemon peel.
