    "I’ve suggested a turtle shapes, but let your imagination run riot and go to town – it’s great fun for kids too. The Tijgerbrood (‘tiger bread’ or Dutch crunch) topping really adds richness to the buns and gives a beautiful finish. These are delicious with a mug of hot chocolate."

    Here's how it's done and what you'll need...

    • 45g plain flour
    • 60ml water
    • 60ml semi-skimmed milk
    • 260g strong white bread flour
    • 100g caster sugar
    • 8g matcha green tea powder
    • 6g  dry instant yeast
    • 4g salt
    • 70ml whole milk
    • 1tsp vanilla extract
    • 1 medium egg
    • 25g butter, melted and cooled slightly

    For the tijgerbrood topping:

    • 80g rice flour
    • 15g cocoa
    • ½ tsp salt
    • 1 ½ tsp sunflower oil
    • 15g caster sugar
    • 1 ½ tsp dry instant yeast
    • 100ml warm water
    •  A few poppy seeds
    • Sugar, for sprinkling
