If you have kids (and possibly even if you don’t), you will by now know that the new Incredibles movie is about to hit the cinemas. If that isn’t a reason to bake some suitable cupcakes and celebrate, then I don’t know what is! The bake itself is very easy, though the decorating does take a little time. It’s so worth it though if you want to surprise your kids and maybe even hide cinema tickets under the cupcakes. Once done, serve with some milk for the kids and a calming cup of Matcha tea for yourself and sit back safe in the knowledge that you’ve probably just earned yourself a gold star from your little ones…
110g butter, room temperature
110g caster sugar
110g self-raising flour
2 eggs, lightly beaten
1tsp vanilla extract
2tsp red food paste
1-2tbsp milk
For the decoration:
1tbsp apricot jam
1 pack ready-coloured (various colours) royal icing in red, yellow and black
A little icing sugar to roll the icing out
“Incredibles” logo to cut out, found HERE, printed to size and cut out with parchment paper or (if you want it to be more stable) cardboard.
Preheat your oven to 180C. Whisk the butter and sugar together until light and fluffy.
Slowly add the eggs whilst continuing to whisk, then add the vanilla extract.
Add the red colouring paste and combine.
Fold in the flour and add a little milk, the batter should be of droopy consistency.
Spoon the batter into the cupcake cases. Bake for 15 minutes. Once baked, leave the cupcakes to cool completely.
Dust your work surface (you might want to use a board to protect your worktop from the sharp knife) lightly with icing sugar. Roll out the coloured icing.
Place the logo cut-out on top of the rolled out icing and trace with a sharp knife.
Brush the cupcakes with a little jam.
Place the cut out logo on top of the jam and very lightly press down.
